Easy Eats: Garden Quiche

Easter is right around the corner and many people are having Easter brunches.In this edition of Easy Eats, we have a simple, yet impressive recipe for you!

Here it is, from Brock Cahoon, Culinary instructor at Lehigh Career and Technical Institute:

Garden Quiche

6 eggs
1 ½ c half and half
¾-pound peeled medium diced potatoes
½ c diced onion (small dice)
½ c diced carrot (small dice)
½ tea salt
½ tea pepper
1 c cheese
2 pie shells


  1. Beat together eggs and half and half
  2. Saute potatoes with oil (not listed)
  3. Once potatoes are browning add carrots
  4. Add onions
  5. Season with salt and pepper
  6. Combine all ingredients (excluding pie shells)
  7. Pour ingredients into pie shells
  8.  Bake at 350 for approximately 45 minutes (until set)
