Lobster Hash w/ Asparagus, Potatoes, Caramelized Onions, Peas, Sherry & Cream
1 Large lobster poached, chilled and shucked
Chopped potatoes, sautéed until crisp
Thin sliced onions sautéed till caramelized
Fresh asparagus, poached and shocked in ice water
Fresh or frozen peas
Brazilian Shrimp Paulista Taco w/ Chunky Guacamole, Mango Salsa & Hot Sauce
Jumbo Shrimp cleaned and deveined

Corn tortillas toasted on the grill, warmed in a pan or heated in the oven
Marinate Shrimp in all in ingredients and roast in the oven until shrimp are done, place in Warm corn tortillas, Radishes, cilantro sprigs, lettuce, mango salsa and guacamole
Pastrami Short Ribs, w/ Potato Latkes, Grain Mustard, Creme Fraiche & Onion Marmalade
We make our own pastrami, which is a drawn out process
Good quality pastrami head in the oven with a little chicken stock, covered until hot
Slice the pastrami and serve with sauerkraut, potato latkes, grain mustard, onion marmalade & onion marmalade
3 Idaho potatoes grated and let sit in cold water for 2 hours to wash of the starch, rinse under cold running water and squeeze dry in a kitchen towel.
mix w/ 4 large eggs, little flour, chives or green onion- salt and pepper and sauté in bacon fat or oil
2 large onions sliced this, water to cover by a couple of inches, add 1/2 cup sugar 1/2 cup raspberry vinegar simmer until the onions are jam consistency, may need to add water along the way
Paella Barcalona w/ Chorizo, Shrimp, Clams, Mussels & Tomato Saffron Rice.
Saute onion, tomato, Spanish hard chorizo( mild), garlic in oil in a large paella pan until all caramelized. Add arborio or Valencia rice to the pan and salute for a moment to coat add chicken stock (Homemade or low sodium) and saffron threads and stir. Add little neck clams, scallops, chicken, mussels and shrimp to the pan and simmer on the stove top, as the stock evaporates you will need to keep adding stock so it does not dry out. when rice is done and shell fish is cooked add fresh chopped tomato and peas, heat thru and serve.
