Sunrise Chef Evan Kechely

Evan Kechely of the K&B Group joined 69 News at Sunrise with some delicious recipes. 

Chesapeake Crab Cakes
Makes 8-10 portions
Ingredients
2 Whole Eggs
3/4 cup Mayonnaise
1/4 cup Red Bell Pepper
1 tsp Dijon Mustard
1 tsp Old Bay Seasoning
1 tsp Curly Parsley
1/2 cup Cracker Meal
1/2 tsp Chopped Garlic
Pinch Black Pepper
pinch Sea Salt
1 Lb Jumbo Lump Crab Meat
1 Lb Backfin Crab or Crab Claw Meat
1/4 cup Melted Butter

Procedure
1 Saute red pepper in a non stick pan with no oil - cool thoroughly
2 Combine all ingredients except crab meat in a mixing bowl
3 Allow batter to chill for 30-60 minutes
4 Preheat oven set to low broil
5 Gently fold crab meat into batter
6 Line baking sheet with parchment paper and brush with butter
7 Portion crab mixture into 8 even cakes and place on baking sheet
8 Brush cakes with melted butter
9 Place crab cakes under broiler at least 6 inches from heat source
10 Broil crab cakes until golden brown (approximately 6 minutes)
11 Turn off heat and allow cakes to remain in hot oven for an additional 5 minutes
12 Carefully remove cakes from baking sheet and serve with your favorite sauce.

Tropical Mango Salsa
Makes 1 quart
Ingredients
2-3 Fresh ripe mangoes
1/4 cup Red Onion
1/4 cup Red Bell pepper
1 small Jalapeno Pepper
2 Tbsp Cilantro
2 Limes
pinch black peper
pinch sea salt

Procedure
1 Peel mango and cut flesh away from core
2 Dice mango flesh into 1/4" pieces
3 Finely chop onion, red pepper, jalapeno, and cilantro.
4 Grate zest from lime and squeeze juice into a mixing bowl
5 Add all prepared ingredients to mixing bowl with lime juice
6 Salt and pepper to taste
7 Chill in refrigerator for 30-60 minutes
8 Serve with tortilla chips or as a condiment to your favorite tropical dish


Crab Stuffed Shrimp
Makes 16 - 20 Shrimp

Ingredient
1 Lb Shrimp Peeled and Deveined
1 Lb Chesapeake Crab Cake Mix
1/4 Cup Melted Butter

Procedure
1 Make crab cake mix according to the recipe featured on this same show
2 Preheat oven to low broil
3 Butterfly shrimp being careful not to cut all the way through
4 Open shrimp and lay out on a flat surface cut side down
5 Place approximately 1 ounce of crab cake mix onto each shrimp
6 Curl shrimp tail over crab cake mix
7 line baking sheet with parchment paper and brush with butter
8 Place stuffed shrimp onto parchment paper
9 Broil stuffed shrimp until crab is golden brown and shrimp are bright red
10 Shrimp should take approximately 6 minutes to cook
11 Turn off heat and shrimp to remain in hot oven for an additional 5 minutes
12 Carefully remove shrimp from baking sheet and serve with your favorite sauce.
