Sunrise Chef Ziad Hariry

True Blue Mediterranean serves up authentic Mediterranean food at it's Emmaus and Bethlehem locations.

Today, chef and owner Ziad Hariry shared some of True Blue's tried and tested favorites.

Garbanzo-based Hummus Dip

1 lb. or 1 can of garbanzo beans
1 T mashed fresh garlic
1 teaspoon salt
1 teaspoon cumin
1/4 cup Tahini (sesame paste)
Extra virgin olive oil
Lemon juice
Pita chips or vegetables

1) Bring garbanzo beans to a boil to soften up for about 10 min.
2) Pour beans into food processor, adding salt, cumin, garlic.
3) Process at high speed in food processor until liquified,
3) Spread onto a plate and top with lemon and extra virgin olive oil
4) Serve with Mediterranean bread pita chips or desired vegetables.

Babaghanosh Dip

1-2 medium sized eggplants
1 Tablespoon fresh mashed garlic
1 teaspoon salt
1/4 to 1/2 cup of Tahini (sesame paste)
Extra virgin olive oil
Lemon juice

1) Grill or bake eggplant until soft and mushy. Let cool off to easily peel off skin.
2) Put into a food processor -- mix with tahini (sesame paste), salt, and garlic.
3) Blend until semi-smooth texture.
4) Spread onto a plate, top with extra virgin olive oil and pomegranate shavings.
5) Serve with bread, chips or choice of vegetable..

Cauliflower Appetizer

1 head fresh cauliflower, separated into smaller pieces
Vegetable oil
Fresh garlic
Lemon juice

1) Heat vegetable oil in deep fryer to 300 degrees.
2) Fry cauliflower until golden brown.
3) Let sit to cool off for a few minutes, then lightly sprinkle desired cumin, fresh garlic and lemon.
