Billy Kounoupis is the owner of Billy's Downtown Diner in Bethlehem.  It's not your ordinary diner which you can see by checking out the recipes he made on 69 News at Sunrise.





Breakfast Quesadilla
                         1 Flour Tortilla
                         3 Eggs Scrambled
                         5 Slices Cooked Bacon and Chopped
                         3 oz Shredded Pepper Jack Cheese
                         3 oz Shredded Cheddar Cheese
                         1 oz Sour Cream
                         1 oz Salsa
                         3 Chopped Scallions
                        1/4 Tomato diced

-Pre Heat Frying Pan with table spoon butter or cooking oil
-quickly heat flour tortilla on each side about 5 seconds
-glaze pan with additional table spoon butter or cooking oil and maintain at even temp swirl butter in pan
-mix the scrambled eggs and cooked bacon in bowl and scrambled the eggs. Cook eggs on both sides
-when eggs are flipped immediately spread the cheese on eggs
-slide eggs on the flour tortilla then fold in half.
-using a spatula place folded tortilla in pan and brown both sides till crisp
-place quesadilla on plate and cut into 3 or 4 peices depending on size
-top with scallions and tomatoes
-serve with sour cream and salsa on side

Green Eggs and Ham
1 Ciabatta Roll
3 Eggs Scrambled
4oz Scrambled Eggs
Tablespoon Pesto
3oz Shredded Mozzarella Cheese
3 Slices of Tomato


-Pre Heat Frying Pan with table spoon butter or cooking oil
-glaze pan with additional table spoon butter or cooking oil and maintain at even temp swirl butter in pan
-mix the scrambled eggs and pesto in bowl and scrambled the eggs. Cook eggs on both sides
-when eggs are flipped top eggs with mozzerlla cheese
-In a separate pan have ham grilling
-when ham is grilled place on eggs
-fold eggs and place slice tomatoes on top
-sandwich eggs between Ciabatta Bread

Cannoli Tower
Prepare French Toast Mixture first,
2 raw eggs scrambled, mix with 1 pint whole milk, half cup sugar, 1/4 sugar, 1 tablespoon vanilla, 1 tablespoon cinamon in a large bowl

2 Slices Challah Bread
5oz Cannoli Filling
6 strawberries sliced
maple syrup

-Pre heat Pan with cooking oil or butter
-quickly drench challah bread both sides in mixture
-cook both pieces till golden brown
-when cooked plate the challah bread side by side
-squeeze cannoli filling in a swirling motion sandwich but don't press the filling with other piece of bread
-top with sliced strawberries and chocolate chips
-drizzle some maple syrup

Pazz's French Toast


Prepare French Toast Mixture first,
2 raw eggs scrambled, mix with 1 pint whole milk, half cup sugar, 1/4 sugar, 1 tablespoon vanilla, 1 tablespoon
cinamon in a large bowl
2 Slices Sourdough Bread
5 oz Hazel Nut Spread
6 strawberries sliced
1 sliced bananna
3oz Whipped Cream
2oz Chocolate syrup

-Pre heat Pan with cooking oil or butter
-quickly drench sourdough bread both sides in mixture
-cook both pieces till golden brown
-when cooked plate the sourdough bread side by side
-glaze both slices of bread with hazelnut
-top with sliced strawberries and bannana
-drizzle some chocolate syrup and maple syrup optional
-sprinkle ome powdered sugar
-top with some whipped cream
