Tabitha Petrecz of Blue Sky Cafe in Bethlehem is showing us how to freshen up some classic breakfast recipes.

Raspberry Brie French Toast

Ingredients:

2 thick slices of bread, ex. Texas Toast
Milk
Eggs
Vanilla
Cinnamon
1/8 cup of raspberries
1 tablespoon honey
1 tablespoon sugar
3 thin slices of brie cheese

Dip two pieces of texas style toast in a mixture of milk, egg, vanilla and cinnamon. Place both pieces on a hot grill until the toast is browned. In the meantime, you can make the raspberry glaze. Take 1/8th cup of raspberries, one tablespoon of honey, one tablespoon of sugar and blend well. This will be drizzled on the french toast at the end.

Flip both pieces of toast, and place brie on top of one piece of toast. Cover the toast (while on the grille) so the brie can melt. Once melted, top the brie slice with the other piece of toast. Drizzle the brie french toast with raspberry glaze.

Two pieces of Texas Toast
Stone Ground mustard
Swiss Cheese
Corned Beef (two oz)
Handful Potato Chips

Fry an egg in a pan. Grill two pieces of texas toast in butter, and grill corned beef. Assemble the sandwich with all of the ingredients.

Madres Stir

Ingredients:

Sliced Red Pepper
Sliced Red Onion
Chopped Asparagus
Sliced Portobella Mushroom
Eggs
Smoked Gouda cheese (grated)

Sautee all of the vegetables in oil until lightly browned. In a separate pan, scramble two eggs. Pour the cooked vegetables onto a plate and top with the scrambled eggs. Garnish with grated smoked gouda cheese.
