Victoria Shparber of Bethlehem's Black Forest Deli joined 69 News at Sunrise to treat us to some delicious Russian recipes.
Blinis - Crepes
2 cups of milk
1/2 cup of flower
teaspoon of sugar
In a blender mix all the ingredients. Check out the consistency, it has to be a bit lighter than your typical pancake mix. Heat up your frying up, make sure its a non stick. Brush it lightly with a bit of olive oil. we usually use a potato or just a brush to brush the frying pan each time the blini is being made. Take a ladle and mix the batter mix, make sure to mix so that the flour doesnt settle all the way on the bottom of the mix. Ladle the batter and pour into your frying pan and work your way around so that the whole pan is covered thinly in batter.. Crisp it on each side for about 30 seconds.
egg noodles - 1 bag
teaspoon of sugar
raisins or any other dried fruit
1/2 teaspoon salt
Cook the egg noodles based on the direction on its package. Mix in the cooked egg noodles with eggs, sugar, salt and dried fruit and mix until the batter is even. Cover the frying pan with the mix and fry it until crispy, when one side is ready - you will need to flip it to fry the other side.
Babka can be served with fresh fruit and sour cream
Zrazi - Potato Filling pancakes
salt & pepper
filling (marinated meat - cooked) or cheese
Shred your potatoes mix in eggs, salt and peppers. Take a frying pan and cover it with a bit of olive oil.. Put the potato batter with a tablespoon - in the middle put your filling and than ladle another tablespoon of the potato batter. Wait until crispy and than flip it so that the other side crisps up as well. Delicious as a breakfast or something to go along with a nice homemade bowl of soup.
