Northampton Community College is known for educating top its culinary students to become the best-of-the-best.  Friday Sue Roth and Jared Tocket join 69 News to show off some of Tocket's skills.  He recently won a SkillsUSA cooking competition and graduates from NCC next month.

Cherry Gastrique
2 cups sugar
1 cup water
2 cups red wine vinegar
1 cup chicken stock
1 cup orange juice
2 cups pitted cherries(blueberries,peaches,kumquats can also be used)

Combine water and sugar- bring to a boil and cook until mixture reduces and sugar turns amber in color(about 15 minutes) add vinegar, stock,and orange juice-simmer until reduced by half and is a syrupy consistency, add the cherries and simmer 10 more minutes-or until syrupy consistency returns.
